Thyron Mathews On Barbecue Showdown Season 2
Season 2 of The American Barbecue Showdown is finally here. The Netflix food competition series debuted in September 2020 and followed the nation’s “best backyard smokers and competitive barbecuers as they compete for the title of American Barbecue Champion.”
According to the show’s synopsis, Each episode has a task that puts the contestants’ barbeque prowess to the test in ways “they couldn’t possibly imagine. From unique meats to old school techniques, they will have to prove they have the skills to smoke another day.”
Joining the lineup of this year’s competition is Thyron Mathews, founder of T & T BBQ.
According to the business website, “It all started when, myself, Thyron Mathews (T) and my Uncle Ced teamed up with a passion – to make the best barbecue there is. With over 50 years of experience, we have been bringing my family recipes to all sides of Iowa.”
Thyron has been barbecuing for 28 years. He was raised on barbecue growing up on a farm in Florida. Its importance to him only became clear while studying at Upper Iowa University in Fayette when he found himself correcting a chef. When Thyron joined the grill crew for the college’s spring BBQ, he was employed by Sodexo Marriott, the company that has a contract to offer food service at UIU. He found himself criticizing the barbecue chef employed by the UIU.
He began cooking on the Fayette campus with the contractor.
Thyron soon befriended Torie Handson. Driving through Oelwein with Torie, Thyron found his first grill. The boys took on odd jobs to pay for it before starting to cook around town, but they didn’t make much money. Additionally, they prepared meals for gatherings of Greek houses and recent alums.
Thyron and Torie composed the original initials of T&T BBQ. T&T BBQ and Catering LLC was named Community Booster of the Year by the Oelwein Chamber and Area Development late last year.
The restauranter also began entering contests. He won his first grand championship barbecue trophy at NewBo City Market in Cedar Rapids in 2013, competing against $20,000 grills with a $2,000 grill Iowa welder Jason Belden helped him assemble from a tank donated to Thyron.
After the Cedar Rapids trophy, Thyron was “bit by the bug.” Since then, he has won 31 additional championships. This includes two consecutive years as “Best in Show Iowa Barbecue” at the Iowa State Fairs in 2018 and 2019.
“I do not play when it comes to my food coming out,” Thyron said. “I’ve got the same respect, whether it’s a benefit or a wedding, … I cook better when I’m cooking for other people than I cook for myself. I believe my barbecue is remembered by the last you taste, so every time I give you something, I want to make sure it’s the best portions, quality, and quantity, and I always buy the best grade of meat I can afford.”
Thyron works as a corrections administrator in Fayette County. He was celebrated for 20 years of dedicated service in June 2022 by Sheriff Marty Fisher. He has been named Community Booster of the Year by OCAD and served as an ambassador for Oelwein.
Spoilers Ahead: Thyron “Big T” Mathews and Logan Sandoval are the two remaining competitors in the competition’s conclusion. In order to decide who will win, the final two pitmasters must go “whole hog” and serve snout-to-tail feasts. Thyron Mathews ultimately triumphs and is crowned the newest Barbecue Showdown champion.
The winner walked away with $50,000.

Thyron Mathews originally started barbecuing because of his family. His mother Ms. Palestine Morgan was a cook who gave him recipes passed down in the family for generations. Born in November 1957, Palestine is 65 years old. According to her Facebook, she works at TravelCenters-TA-Petro.
His father Thyron Mathews Sr. owned a produce farm harvesting watermelon, cantaloupe, and squash back in Florida. “Treat every person as if they are the most important person in the world,” the golden rule for business that is engraved in his business was inspired by his father Thyron Sr. Thyron Sr. is no more.
He had a humble beginning his Florida. The barbecue pit was the center of social life. The labor was divided among families. They barbecued meals for the farm staff and vended to fund their wages. His relatives would leave him to watch the pit while they ran errands, to keep the food from burning.
“My story, I don’t take stuff for granted. People go through stuff, and that’s what is written on your heart… You give, and have faith that God will give back to you. And he does,” he added.
Thyron Mathews Wife
Thyron Mathews is married to his wife Terrishane “Terri”. It was at Upper Iowa University, that the chef met his future wife. He helped her use a waffle maker and they got to talking. Then, Terrishane voluntarily worked as a “free help” in Thyron’s kitchen.
Thyron and Terrishane married on 31 December 2001.
In January 2018, Terri wished her husband on their anniversary writing, “After all these years he still makes me laugh. He still makes me feel safe, He still makes my stomach get butterflies because he is my ride or die He is my everything. I thank God for him daily. Happy anniversary husband of 16 years.”
The couple share three children: one daughter Gladice Mathews (19 years old) and two sons Dallas and Thyron III (18 years old).
They relaunched T&T BBQ, now standing for Thyron and Terri, and they lived briefly in West Union and continued doing cookouts or “cooks” for friends and family, moving to Oelwein in 2004 and relocating within the town in 2018.
They offer “the full barbecue experience,” promoting local businesses by purchasing from them and word of mouth — such as Fareway, Dollar Fresh, Fairbank Locker and Processing, and Kerns Homegrown — and supporting local causes by cooking to raise funds — such as Fayette County first responders and Iowa State Patrol, Oelwein Little League, Oelwein Dollars for Scholars and MercyOne Oelwein Medical Center.
“Me and my wife are so honored when we get mentioned to do stuff like that,” Thyron expressed during an interview in 2021.
Born in 1982, Terrishane is 41 years old. She formerly worked as a Remedial Service Specialist at Four Oaks.
