Thiago first got interested in baking because of his mother. Then in high school, he took a course called Careers Through Culinary Arts Program. He was not formally trained but after high school, he went on to get first-hand experience in New York City restaurants.
For a major part of his career, Thiago worked as a Corporate Executive Pastry Chef for EMM Group in New York. In 2016, he moved to the Greater Boston Area and started working as the Director of Chocolate for Chew LLC.
In October 2021, Thiago opened his patisserie called SALT Patisserie in Newton, Massachusetts. As a pastry chef, he works in his restaurant and as an owner, he operates the whole business.
