Enrico Carloni’s journey as a pastry chef began as an intern at a three-star Michelin restaurant named Ristorante Ullassi. In the interview with The Chefs Forum, he spoke of his passion for cooking. He shared, “The passion for cooking was born from when I was little. I saw my grandparents in Italy cooking, and from there I was passionate about the world of cooking. I learned my skills while working because I never went to a pastry school but I was always a little creative”.
He interned there from November to December of 2008. Two years later in February 2010, Enrico became an apprentice pastry chef at Pasticceria 2000 and worked till January 2013.
In February 2013, Enrico joined Madonnina del Pescatore ** Michelin as Chef De Parties. Two years later in November 2015, he landed an internship at Panificio Davide Longoni. Whereas, he continued working at Madonnina del Pescatore till November 2016.
In 2016, Enrico Carloni joined Piazza Duomo ***Michelin joined as Head Pastry and worked there till November 2017. In 2019, he landed an internship at Cakes & Bubbles Albert Adria and also worked for five months at Claude Bosi@Bibendum restaurant **Michelin.
He has been working at SUSHISAMBA GROUP LIMITED as Head Pastry Chef since November 2017 in London.
According to Enrico, the thing he enjoys most about being a chef is “the adrenaline you feel during the service and the pleasure of seeing your dishes that are appreciated by the customer”. Speaking about his influences, he shared, “My great influences were when I worked for chefs of Michelin star restaurants such as Enrico Crippa, Albert Adria, Claude Bosi, and Moreno Cedroni who taught me the balance of a dish and respect for seasonal ingredients”.
