Spencer Metzger, the head chef of The Ritz London, has been crowned the winner of BBC Two’s Great British Menu. The first season of the show aired in 2006. In 2022, the show was presented by Andi Oliver and was on its 17th season. The judging panel consisted of Ed Gamble, Nisha Katona, and Tom Kerridge as well as many guest judges who appeared on the show.
The competition started on 1 February 2022 and the head chef joined the show representing London and the South East.
He brought the modern touch of pop culture to his dish while competing on the show. He had presented the main dish inspired by the 1995 BBC series Pride and Prejudice. Named ‘first impressions’ and inspired by a Regency banquet, it featured partridge, Pommes de Terre sarladaises, and poached pear.

He spoke with The Staff Canteen about what made him decide to join GBM in 2022, he shared, “I was thinking of doing it last year, but I didn’t have time. I just thought now I’m at a stage in my cooking, where I actually feel confident in what I’m doing. I’m confident enough to do my food with the brief. I thought I’ve got to give it a shot now, so that’s why I went for it.”
“It was intense, really, really intense. I’ve never done anything like that before. We’ve only done a few things at The Ritz with cameras and nothing so major. It was the first time I’ve ever experienced it and obviously, you don’t get to see the program until it’s literally on TV.” Speaking about the experience working under camera he shared. “I was quite happy with the way it came out. There were a few moments where I watched myself and thought what am I doing, but I was happy all in all and it was a good experience.”

Speaking with Roux Scholarship, Spencer talked about his culinary heroes. He shared, “I think firstly I would mention John Williams who has always inspired me my whole career and continues to. A man who is more than a chef, a person who is a role model, mentor, and ambassador for British Chefs. ”
He added further, “The Roux Family have always inspired me from a young age, their approach to classic cookery has always been something I admired and the Roux family are real inspirations individually and collectively. I admire Bjorn Frantzén for his approach to cooking and also as a leader who is really, in my eyes, at the top of the culinary ladder.”
Furthermore, Spencer attended Bournemouth and Poole College, where he completed the specialized chef scholarship, including his apprenticeship at the Ritz London.
